Cutbow Coffee Roastology is the culmination of more than 25 years experience by one of the nation's most accomplished artisan coffee roasters, Albuquerque New Mexico's own Paul Gallegos. Personally batch roasting over 70 million pounds for Peet's Coffee, the pre-eminent craft coffee roaster in the US, Paul's acumen is undeniable.  Every batch he roasts reveals the exemplary skills of a true master of the craft. Every cup you enjoy is proof of his passion for great coffee.

Cutbow Coffee is named after the cutbow trout, and in honor of Paul's late father, an avid fisherman of the waters in northern New Mexico. A portion of proceeds from every bag sold will be donated to the Hermit's Peak Watershed Alliance, working to assure quality water in some of his father's favorite fishing holes. Fish on.

New Mexico and Michael are a match, a transplant of 28 years, Albuquerque is his home. The Air Force brought him here and teaching in APS broadened his understanding of his new home. His decision to open a coffee shop was based on a passion of coffee and a commitment to community. With this mindset firmly in place, Michael Thomas Coffee open it doors in 2004.

"I’m a third generation Colombian coffee grower. As a child I grew up running through the fields of my grandfather’s coffee farm in Piendamo, Cauca, Colombia. Learning from the best about coffee, tradition and best practices.

My brother and I returned to our roots and started Villa Myriam Coffee in 2009. I started my education through the Barista Guild of America (BGA) and got certified taking all classes for level 1 and 2. We also got certified and educated through the Rosters Guild of America (RGA) to ensure that we can provide the best coffee available. 

In 2019 I sold Villa Myriam to focus on The Brew, changing my business model from industrialized to artisan, being able to focus on small batch roasting to order and engaging and working with my community here in the US and in Colombia. Join me and my community of coffee lovers and help me support small coffee growers all around the world."

Sueños Coffee Co was born from the desire to bring the high-quality local coffee shop experience straight into our community. Sueños Coffee Co was inspired by our 12 year old daughter in 2020 who in the middle of a pandemic dove into her love of baking and launched Sugar N Glitz. It started as a home-based baking business but quickly turned into New Mexico's first Desserts & Coffee Food Truck to hit the streets of New Mexico and serve our community the best of both worlds. Our barista dad then began to build our first walk-in mobile coffee shop. Trifecta Coffee Company opened in April of 2015 after Thomas and Lee combined over 20 years of their experience in the coffee business. Since the beginning they have focused on creating a coffee shop that brings you great service, coffee, and baked goods. 

Together they have built a team that makes everything in house. This is evident the minute you enter the shop. You are greeted with a wide selection of roasted coffee beans and a variety of fresh baked items. The drink menu utilizes fresh made syrups, sauces, spices, and herbs.

The Catalyst Coffee truck was launched in Albuquerque, NM in March of 2020. Michael Breden, owner and operator and a native of Albuquerque, launched his first mobile coffee truck business in Oakland, CA in January of 2006 and, after a successful 15 year run in the SF Bay Area, decided to dive into the burgeoning coffee scene here in Albuquerque. Our coffee shop is located on the corner of Coors and Montaño at 6010 Coors Blvd NW #2, Albuquerque, NM 87120.
